Elisabeth Rozin, second vice president of the Philadelphia chapter of Les Dames d'Escoffier, holds up a copy of Esther Aresty's 1964 book, The Delectable Past. She recalled how the book influenced her life by opening her to the idea that the world of the kitchen was not just a limited domestic pursuit, but was a universe unto itself.
